The ODYSSÉE is one of the two major ancient Greek epic poems attributed to Homer. Its two most pertinent characteristics are: (1) It tells the story of “A quasi endless voyage“.
(2) This voyage is marked by “many changes of fortune“.
(1)”a quasi endless voyage.“ Time plays an important part in the making of our spirits. We live in era where time became a commodity. How promptly a task can be accomplished is often synonymous with profitability and the quality of service. If such rule applies to most aspects of modern industry, fermentation, distillation, or maturation are exempt to such standards.
These are things that are meant to be happening at their own pace since humans first crushed grapes. We are convinced that A rushed ”modus operandi” would affect not only the flavor and the aroma of our products, but also the quality of the ”ivresse” that comes with the consumption of our spirits. The great Kintaro Hattori said soon after he founded his house of Seiko: ”Don't hurry, don't stop…” ”It is better to do something continuously, perpetually, and untiringly than to hustle and fail.”
(2)“Many changes of fortune“ We have learned through experimentation to accept change as inevitable, and to welcome It as blessing. The unique spirit in which we work and the principles we have set for ourselves do not allow for uniformization. on the contrary they anticipate that every batch differs from one another. Change or difference is not a result, but an ontological condition that is attached to The way we do things. Our very spirit, the soul of Odyssée lives through perpetual motion.
The Odyssée principles:
(1) The quality of our products comes
first. Odyssée believes that only an
honest product can generate continuity.
(2) We only use the highest quality
products and source locally
whenever possible.
(3) We allow for indigenous bacteria to be part of our fermentation process. We find that natural lactic bacteria and natural yeasts generate a wider complexity of aromas and flavors. (4) In order to capture a wider range 0f aromas during distillation, we distill in manually controlled copper pots.
(5) We dilute “a drop of water at a time“ using a high quality water. (6) Besides water, no coloring, flavoring, or other blending material is ever added to our products.
(7) We age our whisky in oak barrels that were previously used to mature exceptional wines. (8) We accept change as inevitable.
Single cask as a rule
All our whisky is released in small
batches of bottles coming from a “single
cask“. We do not blend.
All batches are unique and witness the
particularity and the spirit of each cask.

The Single Grain Whisky
Single grain whisky has long been considered a cheaper and less attractive alternative to single malts. They are typically lighter bodied, less flavorful, and were historically used for blends. Despite all this we find that they can also be used on their own terms. As a matter of fact, the adequate assemblage of different grains can generate a richer fermentation which, when followed by the right maturation, produces whisky that can be more complex and just as enjoyable as single malts.

The Corn Whisky
Our Corn Style Whisky is essentially made of
corn to which we add small amounts of
malted barley, smoked barley, and
spelt. Since corn is extremely rich in
sugar, roasted caramel flavor
dominates the ensemble, while the barley and spelt bring mineral
and vegetal notes. The smoked barley adds smoky notes and
balances this round and gourmand spirit.
Unlike American bourbon whiskey we do not age our bourbon
style corn whisky in charred new oak containers.
